Savory pork roast is a wonderful thing, and this particular one is sure to please! If you dont have a mortar and pestle, a food processor can be used to make the adobo marinade, just mince the garlic before putting it in, and crush the peppercorns, or substitute 3/4 tablespoon of course ground pepper for the whole peppercorns, as well as mince the oregano. Use the food processor to bring it all together, letting it run for about 5 to 10 good pulses (about 30 seconds to a minute). This roast does have a few more steps to it than most roasts, including letting it marinate for at least 24 hours, but its definitely a great recipe, and worth the time and effort!
