Scientists have found literally thousands of compounds in the foods we consume, all interacting with the cells in the body in ways still being discovered. These compounds are phytochemicals (phytonutrients), substances which are found in the plants and used by the plants to ward off fungi, insects and viruses. When we consume fruits, vegetables and other plants, those same compounds protect our cells. They can boost the immune system and protect the cells from harmful free radicals. For instance, the herb basil contains phytochemicals known as terpenoids which have been found to detoxify cancer-causing substances. Lycopene, a phytochemical found in tomatoes, help prevent heart disease as well as decreases cancer risk. Researchers are learning more and more about the role phytochemicals play in boosting the immune system and reducing inflammation. Another important role for these plant chemicals is to assist the absorption and utilization of vitamins and minerals in the body.
