Scones with strawberry jam and cream Ingredients 5 Cups of plain flour 2.5 teaspoons baking powder 1 rounded teaspoon salt 1 Cup plus 2 tablespoons of butter 3/4 cup of sugar 2 eggs 1/2 cup milk 1.5 teaspoons vanilla essence 2 cups sultanas / golden raisins Combine flour, baking powder and salt, sift into a large mixing bowl. add in butter using your fingers until mixture resembles course crumbs. Add sugar and mix well. Add eggs, milk and vanilla essence and mix well. Add sultanas and blend thoroughly. Turn out onto lightly floured surface and roll to a 1/2 inch thickness.This makes about 15 scones Cut into rounds using a 2.5 inch biscuit cutter and place on an ungreased baking sheet. Bake at 200° for 15-20 mins until golden brown I like mine with jam and cream
