The outer spoon is for your tea, and it should rest on your saucer when not in use. The next spoon is for any salads, juicy items, or any that prove difficult to eat with your fingers alone. Use the spoons provided in the curd and clotted cream to serve it to your dish, then use your own knife to apply to your breads. This keeps the crumbs out of the spreads, a considerate act that takes into account the fact that there are others partaking of the curd and clotted cream, as well.
