Seriously, how do potatoes you are boiling go from underdone to complete useless mush in 2 minutes time? I just wasted 4lbs of potatoes and a whole jar of vegan mayo, because I was in denial about how overdone they were and attempted to make potato salad out of them anyway, only to end up with some awful cross between mashed potatoes and potato salad. I can make all kinds of difficult dishes but I cant boil potatoes---wth is wrong with me? :(
