Shepherds Pie...I am posting this for my future reference mostly, but if you like shepherds pie, give it a try. Today I googled recipes using leftover mashed potatoes because I have some from Christmas dinner in the fridge. When I saw shepherds pie among many other recipes, I knew that was it. I love shepherds pie, my aunt Barbara Phillips used to make it when I would stay with her at a very young age. I have never made it before during my thirty plus years of cooking and baking. I looked at several ways different people make their shepherds pie and decided how I was going to do mine. It turned out delicious I had to restrain myself from eating the whole thing in one sitting. Here is what I did: 2 Lbs ground beef 1 medium onion chopped 1/2 to 1 cup of brown gravy (leftover from Christmas dinner) 2 tbsp or so of worcestershire sauce salt, pepper, onion powder, garlic powder (a couple of sprinkles of each) 3 cups mashed potatoes 3/4 cup shredded parmesan cheese 3 tbsp butter 1/4 cup or so of half and half 1 can of cut green beans well drained 1 can of whole kernal corn well drained Cheddar cheese sliced from block cheese or shredded cheddar cheese. (I dont like the taste of shredded cheddar, so I used the block cheese and made my own slices. If you prefer the shredded cheddar, use it.) Brown hamburger meat add chopped onions just before meat is done. Drain grease from meat and return to pan over medium heat. Add brown Gravy, worcestershire sauce, salt, pepper, onion powder, garlic powder and any other spices you like. Stir for a minute or so. Add drained green beans and corn and stir to combine all ingredients. Spread meat mixture into a casserole dish or pan. Warm mashed potatoes in microwave to soften. Add butter and half and half. Stir and heat in microwave until butter is melted. Stir in the parmesan cheese and mix well. Spread potato mixture over the layer of meat. Heat in 350 degree oven for about 20 minutes. Put slices of cheddar cheese across the top of the potatoes and return to oven until cheese is melted. Note: The measurements listed above are not exact. I eyeballed everything. I didnt measure out any of it, so please adjust your ingredients as needed for your taste. Waa Laa...Eat and be merry!
