Showing off my first attempt at cooking pork with black sesame (gahori mangxo with til). Recipe: 500 gms pork meay - mix of fat and lean meat Soak 4 tsps of black sesame 6 - 8 pods of garlic 5 green chillies Make a paste of these ingredients and and keep aside. Boil the pork with a little salt. Cool and strain it. Do not throw the water. Now heat little bit of mustard oil, add bay leaf, onion paste and fry the pork , add pepper and salt to taste. I added a few spoons of the boiled water as I was frying it. When fried well, add the paste and cook well till meat is tender and the paste blends in well with the meat. If you like the gravy a little light, add a little more boiled pork water and cook for a few minutes more. Cook covered till done or oil leaves from sides of the wok and the sesame turns really black . Garnish with chopped fresh coriander - optional. Serve hot with rice.
