Sick of doing the same old veg and side dishes? I am! Out of habit and basically because I know whats in my comfort zone. Well, this is super fast and super easy. Its got potatoes, finely chopped spinach (because my kids will only eat it that way!) onions, carrots and garlic, so its a one dish job instead of making loads of extras. I dont usually measure, but il give you estimates. You can judge the amount veg by the photograph. I parboiled new potatoes and carrots then left them to the side. In the pot I had used, i added coconut oil,I then softened the onions for about 5 minutes. Then add apx 2 teaspoons of garam masala, a clove of garlic finely chopped, a teaspoon of chilli (fresh or powdered, up yo yourself) and a little ginger. Cooked for a minute or 2 and then added the carrots and potatoes. After 5 minutes I added the spinach, then coconut cream (or cream, whatever you fancy) and seasoned to taste. Easy peezy, had it done really fast. It would be great as a side for a curry. Im using it as a side today with roast chicken that I have yet to decide what to flavour that with. If you have any ideas, pass them on, Im always grateful for ideas xx
