Simple things in life and the pleasure of eating simple food. Sometimes that’s all you want. A simple gesture. A simple act of love or kindness. An otherwise simple phone call to simply remind you that you are not forgotten. Simple yet not so simple really! When I was little, if I had a cold my ma used to make me hard toast with butter along with a side of special potatoes, something like home fries. Boiled potatoes cubed in small pieces and then lightly fried in butter with salt and lots of pepper. Over the years, I have added many more things to my list of comfort foods. Simple ‘bori diye rui machher jhol and bhaat’ (white rice with rohu fish curry), ‘sheddho bhaat’ (white rice, boiled lentils and boiled potatoes mixed together) after a long trip or a long flight, and peanut butter sandwiches to name a few. And strangely enough, my mind has programmed them in a way that almost all of them are related to some unique experience. Like ‘sheddo bhaat’ after a long trip or a long flight. Spicy hot soup after a long drive in the cold. Chicken curry and rice on a Sunday afternoon. Simple fish curry and rice on an otherwise uneventful day. Sushi on a romantic date with a fun/funky guy. Chilean seabass cooked very mildly for a very special romantic night. Aakhni Pulau or Biryani for day long hang out session with friends. Grilled fish and wine: a log cabin in a jungle. I guess I am getting carried away and should stop here :-) Somehow I assumed that just because I relate to the simple toast and potato combo as something tasty when I have a cold, it will be the same for everyone else including my kid. He actually does not like it as much. He is quite a foodie and he has very definite ideas of what he likes to eat and when just like his mom does. His idea of comfort food when he is recovering from a cold is another very simple food: ‘grilled cheese sandwich’. And since he is the one recovering from the cold, and not me, tonight I will write how to make the tastiest grilled cheese sandwich. Crunchy on the outside while cheesy and soft in the inside. Recipe: 1.Low and slow is the way to make a good grilled cheese sandwich. This way, the bread does not burn while the cheese melts nicely inside. Also, use a heavy non stick pan so that it does not get hot too quickly. 2.Use cheddar cheese. Not all cheese melt properly. Dry crumbly cheese or overly aged cheese are not good. 3.Here comes the crucial tip: Take 2 slices of bread, put butter on one side of each bread and then grill both sides of the bread. Yes, I repeat, both sides of the bread need to be grilled lightly. 4.Now add the cheese on the buttered side of the slices of bread and close the sandwich. Now you will know how it pays to grill both sides of the bread. As the butter is already hot, it will help the cheese melt much faster so that your bread turns brown on the outside of the sandwich but never gets burnt. Now you have a perfect grilled cheese sandwich ! Enjoy with a drink of your choice ! And I am listening to Utopia by Alanis Morissette. Nothing simple about this song.
