Since many liked my recipe of vegetable paneer... would love to share it again with all of you...had posted it some time in August... Recipe to make vegetable paneer 1. For a measure of 1 ½ ltr milk, take 1 small bell pepper each of red, green and yellow colour. Dice them very fine (I used a chilli cutter to chop them fine). 2. Boil the milk. When it gets a rolling boil, add juice of 1 lemon or 2 tbsp or more if required of vinegar. 3. Keep stirring for 3-4 minutes while the milk curdles. 4. Remove from stove and drain whey using a muslin cloth. At this stage add the bell peppers and herbs of your choice 5. Squeeze out excess water; Add a pinch of salt. 6. Cover it with the muslin cloth; place something heavy on it. (if nothing is available, fill a vessel of suitable size with water and keep it over the fat). 7. Leave it for 30-40 minutes. 8. Refrigerate for 1 to 1 ½ hours. 9. Cut into chunks. Can be had as it is with a dash of salt and pepper if you like raw paneer or shallow fry it.
