Sitaphal kheer..popularly known as athar payesh in Bengal..Leant making this yummy sweet dish from Maa..i have just given a twist by giving it a mild rose essence !!! Sitaphal Kheer Recipe :Milk 1 litre , sitaphal(custard apple) 3 big deseeded,sugar 5 tblspn , 1 tblspon chironji nuts ,some almonds ,pistachio, Rose water or essence, dried edible rose petals . Soak the chironji nuts , almonds and pistachios in water into 3 different small bowls so that the skin can be removed easily . Now heat the milk and once its boiled ,simmer the gas and keep it on low flame stirring occasionally as it has to be reduced to half.this will going to take an hour or litl more . once its reduced to half add the sugar and let it mix properly .Now add the chironji seeds after removing the skin and let it cool down a bit and add the rose water and deseeded sitaphal and mix that well .let it cool down to room temperature and refrigerate it for atleast 1 hr before serving .put some chopped almonds, pistachio and rose petals on top and have it chilled.Happy cooking n sharing :)
