Smothered Chicken I used 6 medium sized chickens for this recipe Marinate chicken in Caesar dressing for at least 3 hours (I marinated mine before I went to work and began fixing it when I came home) 4-6 pieces of bacon 3 cups of Chicken Broth Flour 1 ½ cups of Heavy Cream Mushrooms (optional) Onions (optional) Tomatoes 2 tbsp of Lemon Juice Salt Pepper Garlic Powder 3 tbsp Butter Any type of pasta Cook the bacon to your preferred crispness and set aside. Leave 2 tbsps of bacon grease in the pan then place the marinated chicken in the pan and brown the sides. (No need to cook it through you will be placing it in the oven to cook.) Once finished with this place the chicken in the baking pan or casserole dish, empty all grease out of the pan. Place your 3 tbsp of butter in the pan with mushrooms and onions stir and cook, letting it caramelize then place 3tbsp of flour over the sauce and keep stirring. Pour in your chicken broth and heavy cream, bring to a boil and add you seasonings salt, pepper, garlic powder and lemon juice. Continue to stir for 2 minutes, once complete pour over the chicken and place chopped tomatoes on top of it. Place it in the oven for 20-25 minutes or until chicken is cooked thoroughly. While doing this heat up your choice of pasta, for a healthier option you can use broccoli, cauliflower or zucchini spaghetti. Once the chicken is cooked take out of the oven and break up the bacon on top and serve to your family.
