Snickerdoodle. Snicker-what I hear you ask?! Yup, until recently I too had never heard of a Snickerdoodle before. Turns out its an American, rich, buttery, cinnamon and sugar flavoured cookie. Um.. yes please!!🙋 So heres my healthy version, made using the all new Snickerdoodle flavoured Select Protein powder by PES, and #Natvia instead of sugar. Enjoy! SNICKERDOODLE PROTEIN COOKIES Makes approx. 20 cookies 2 scoops PES Select Snickerdoodle Cookie flavoured protein powder 1 cup almond meal ½ tsp cream of tartar ½ tsp baking soda ½ tsp baking powder ¼ cup Natvia for baking ¼ cup cocoa butter (coconut butter will also work) 1tbs honey 1 tsp vanilla extract 1 egg 1.Pre-heat the oven to 180 degrees C. 2.Using an electric mixer, beat the cocoa butter until Light and fluffy, and then gradually add the Natvia and beat until dissolved. 3.Add the egg, honey and vanilla and beat until well combined. 4.Gradually add the remaining dry ingredients and beat until it forms a dough. 5.Cover and chill for about 10 minutes in the fridge. 6.Remove dough from the fridge and using damp hands, roll into balls, then flatten a little by pressing down with your palm. 7.Place the cookie balls at least 2 inches apart on a lined baking tray. 8.Bake in the oven for 5-10 minutes or until just golden (mine took about 8 minutes). 9.Leave on a rack to cool. 10.Store in an airtight container or enjoy immediately. MACROS (per cookie): 78 calories / 4g protein / 1.6g carbs / 5.9g fat
