So- veggie pals, I really really want to eat less animal products, but I have this big dilemma. See, I have tried so many times to replace some meat and cheese with more vegan super foods like more leafy greens, quinoa, lentils, organic tofu, etc. I feel like I have a pretty good grasp on what to replace animal products with. AND YET- every time I do this I become fatigued, lose muscle, and put on weight. Whats the deal??? Anyone else out there have this problem? Do any vegetarians have any real solutions to this? Being tired is the worst part. I cant afford fatigue. I know there are better meat options in the world- I do my best to choose truly grass and range fed critters when I can....but still, with kiddos, and me, its hard. I need some solid advice on foods/ combinations that will make me feel ALIVE and strong. Sadly, it seems that meat is what does that for me. What to do, what to do????
