So Dallas area professional foodies: I have a suggestion about a restaurant that may be worth your attention. Its an inexpensive fast-pizza joint. Dough Bros on Keller Springs and the Tollway. Looks like any number of meh franchises that have come and gone. (In particular Straw Hat Pizza, out of California.) You order, the guy takes a hunk of dough, rolls it into a flat circle, puts it on a round porous pan, loads up toppings and puts it on a mechanical oven conveyer belt. Five quick minutes from order to eating. I was unimpressed while watching on my first visit. But its not a chain, according to the owner. Its a single store. And the pizza is actually good, if you like thin-crust pizza. Everything in the pizza, from the dough to the sauces, is made in-house. The unusually thin crust is crisp, the toppings actually have flavor. My one complaint: No anchovies. (No anchovies? I spell my name Danger.) He aspires to quality: His bottled root beer is amazingly good Texas-made St. Arnolds. And his business is not as good as I think it should be. Hes not family, friend or acquaintance. I dunno that Id drive across town to eat there, but its a cut above most fast food. And its *different*. (Non-professional food fans: Feel free to try it...1:-{)>)
