So Good Being Green: A little variation on the original plan for tonights pasta dish because I was feeling like asparagus. Creamy pesto with a twist. Prepared pasta, drained and returned to saucepan. Meanwhile, prepared pesto which was a puree of: About 12 small asparagus spears (steamed for two minutes), 1/2 ripe avocado, 2 medium cloves garlic, 1 tbsp olive oil, juice of 1 lemon, 1/4 cup almond milk, 8 milled almonds, 1 tbsp dried basil, 1 tbsp parsley. Pureed all and added to cooked noodles, brought back to heat on low and served with halved grape tomatoes and basil.
