So, I had Chuck pick up some Mexican food from a little spot we like. Ive never had their enchiladas, so I thought Id give those a try. When I opened the container they were ice cold. The cheese inside was not melted, the cheese outside wasnt melted, the sauce wasnt cooked, even the flour shell was raw. I took it back to the restaurant, and the cook comes out to defend his product. He makes me another one, its still raw. I told him it was ice cold. He said (there was a language barrier) that its cold outside. Finally I asked for my money back. Question: are enchiladas supposed to be melty and gooey, maybe even baked? Or, is this a cold dish? I invite my Latino/Mexican friends and all connoisseurs of Mexican food to help me sort this out.
