So I made a marsala onion and mushroom reduction with real irish butter for my filet mignon and instant mashed potatoes(I got lazy) which I spiced up with garlic, chives, kosher salt, and fresh cracked pepper. The marsala sauce reduced down to where the butter and wine were so sweet and complimented the portabellas and red onion perfectly. I seasoned my filet with peruvian chili lime seasoning and cracked black coffee and spice rub then cooked them to a perfect medium rare on the stove no less. JEEYA! Tomorrows menu is chicken marsala with and crusted with chipotle gouda with irish buttered corn. Yes ladies, Im single!
