So, a few months ago I gave tips on dry aging steak....so...it took four days the flavor was great but a bit chewy. Newer better method...half salt half corn starch, coat steaks, place in freezer on cooling rack on cookie sheet, 30 to 60 minutes in freezer then grill...science behind it...salt and corn starch draw out water...freezer draws out water...end result...amazing moist seasoned meat! Give it a try and tell me how it worked for you! Let me know if you need clarification on the "recipe."
