So a little later than normal but i had a guest up, but here is what I made for sunday tea. There was a bit of preparation involved but it was most definitely worth it. The tongue was soaked twice to remove any impurities. after this is complete it was cooked slowly in a vegetable stock. The stock that is created from doing this would be wonderful to use in gravies or soups. Once cooked and cooled, it is then peeled and cut into slices. these are then bread crumbed and quickly deep fried to give it a crispy coating. It was served with roast turnip, cavolo nero, mash potato and a mustard mayonnaise. The idea behind this dish was to take something, that most people would probably find disgusting and make it something familiar ie. pork schnitzel or breaded lamb cutlets.
