So at dinner tonight, Ive official finished my 30 day meatless diet. With the exception of load potato skins with bacon and green beans with salt pork, I made it. So what did I learn? 1. I lost 18 lbs. 2. I need to eat more protein 3. I like vegetables again 4. Everyone eats all my fruit in the house 5. I need to do be with my tween meals 6. I didnt save must on groceries (fruit can be expensive) but did save on fast food (no McDonalds or Wendys) Im so proud of Leslie Hightower Banks!!! She cheated from time to time but she supported me through this month of healthier living. Until the end of August, we will try to limit our meat intake to one meal per day. We will concentrate on eating more fish and chicken (grilled and baked), George Foreman grill pork chops, and a huge amount of summer fresh veggies. I plan on smoking some brisket and ribs maybe this weekend. The ideas will be to use the prepared smoked meat as part of our meals. If the meat is already prepared, our focus can be on the healthy side dished. Be on the lookout for some simple recipes.
