So(ba) Yu(ba) Like it Hot? Chef and Tofu Master Minh shared the tofu-love and knowledge on the #wholefoods demo stage at #SFSFF yesterday. Heres the recipe for his Spicy Soba Yuba Noodle Salad- 1. The Dressing: Mix 1/2 cup rice vinegar, 1Tbsp sugar, 1/2 tsp salt over low heat until sugar dissolves, Add 2 cloves chopped garlic, 1/2 chopped red chili, and 1 tsp toasted sesame oil. Cool and add zest and juice from 1 lime. 2. The Soba: Cook 8-9 oz soba noodles in salted boiling water for 4-5 minutes until al dente. Drain/rinse under cold running water. Leave to dry on dish towel. 3. The Yuba and Tofu: Use one 8 oz package of Hodo Spicy Yuba Noodles, and julienne 4 oz Hodo Firm Tofu. 4. Add 1/2 sliced red onion, 1.5 cups chopped basil, sliced peach, and mix in a large bowl (Dressing, Soba, Yuba, Tofu, onion, basil, peach) 5. Garnish with cilantro, serve 4, and enjoy!
