So for the past 3 weeks we have been trying to avoid processed foods, white sugar, and white flour. We all feel great and have begun to slim down. But I love to bake and have been experimenting with different recipes using natural foods. I got a granola bar recipe from a friend and revised it, we are all LOVING the results! They are super sweet but have no sugar and no flour, if you want to hear it read on: preheat oven to 325 2 cups old fashioned oatmeal cook the oatmeal in the microwave in 1 minute increments, stirring in between, for 5 minutes then let cool 1/2 cup finely cubed dates (you can use raisins or dried cranberries but watch out, they may have sugar added!) 1/4 cup finely shredded coconut 3/4 cup chopped nuts (your choice, I used peanuts, almonds, and sunflower seeds) 1/2 cup rice flour (you can use wheat germ instead) 1/4 cup flax meal 2-3 tbs maple syrup (this makes it pretty sweet, you can leave it out if you wish) 1-2 tsp cinnamon (I used 2 for more intense flavor) 1 tsp nutmeg ( you can leave this out but I like stuff to be packed with flavor so I added it) 1 tsp salt 1/2 cup honey 1/2 cup coconut oil (melted) 2 tbs all natural, organic peanut butter (just nuts and salt please!) 2 egg whites stir all together and press into a 13 x 9 pan lined with tinfoil (spray the tinfoil with cooking spray!) cook for about 35 minutes, until top is dark golden transfer to wire rack using tinfoil and let cool cut into bar shapes and enjoy!!
