So getting back to that protein mini-cheesecake. The recipe is in the link! Topping it was super simple. I just stirred some sugar-free strawberry jam until smooth then topped. Sometimes I put a dash of ground ginger in my jam (especially when I use apricot preserves) to give it a flavor punch. For size perspective thats a salad plate its sitting on and a butter knife sitting next to it so its not big at all and freezes well when wrapped properly.
