So glad to be back on track... Kumato tomato and fresh mozzarella stacks with fresh basil and roasted red pepper served with roasted organic carrots with chives and garlic and sautéed lemon chive shrimp! Grocery list: 1lb Xtra large Shrimp 1 lemon Chives Tomatoes any kind 2 large fresh mozzarella balls Basil Bunch of carrots Shrimp recipe: Clean and devein shrimp and pat dry. Mix with 1 tablespoon olive oil, salt and pepper, crush red pepper, small bunch of chives chopped, garlic powder and onion powder then squeeze juice of half a lemon and toss and set aside. For carrots I like to leave whole and sea salt, pepper them up with a little garlic powder and a dash of olive oil. Roast in oven for 20 minutes on 425 on baking sheet. Tomato stacks: Slice tomatoes about 1/2 inch thick and same for cheese. Place one slice of cheese in between two tomatoes and top with salt, pepper and fresh chopped basil. Then drizzle with olive oil. I like to serve with roasted red peppers! To cook shrimp: heat skillet on medium high heat and place a tablespoon of butter in pan. Wait til pan is hot and seat on each side no more than 3 minutes. If pan gets dark splash some white wine to deglaze and well I mean wine gives everything more flavor too( or chicken stock if u dont want to use wine)! This is such a quick healthy and cheap meal. Makes four servings cost is about 25.00! Thats 6.25/ person. Where can you get shrimp dinner for that price!!! Enjoy
