So grateful for Wilbur the pig. We really enjoyed having him on our farm this summer. Irene rendered 10 pounds of lard from Wilbur on Saturday, ending up with this beautiful milky white lard and a bunch of cracklings that are usable on pizzas, in chili, sprinkled into tacos, or as a snack. We are all about using as much of the animal as possible. The apple pie Irene made with this lard was so good she forgot to take a picture of it before it was completely eaten!
