So here is tonights concoction. 1 wal mart rotisserie chicken. (completely deboned and then rough chopped so mama dont recognize her offspring) 1 large container of sour cream (I use Daisy just cause... well I dont know why I just do) I large can of Old El Paso enchilada sauce, cause there aint no other (whatever flavor gets your gobbler goin) 1 regular size can of Old El Paso refried beans (see above) 1/2 jar of Pace Picante Sauce medium just cause it aint made in New York City. 1 large bag of fiesta mix shredded cheese. corn or flour tortillas Mix all of the above ingredients using half of the cheese. Do not mix in the enchilada sauce. Line two 13 x 9 baking dishes with the tortillas. You might want to spray some of that dont stick to my pan stuff in there just to be on the safe side. Layer in half of the contents into each pan. Put on another layer of tortillas. Pour 1/2 of the enchilada sauce on each pan and then finish off the shredded cheese on top. Bake at 350 for 25 minutes then turn on the make it burn thing on the top of the oven to brown the cheeses for 5 minutes or until it reaches the desired state of char. Take them out and serve them up. If you like it let me know, if you dont keep it to yourself cause I get my feelings hurt real easy.
