So much we had yet to learn about each other, but on the first day Hawa Diallo worked with Charlotte Zolotow, Hawa was in the kitchen with me and she told me confidently, I am very good cook, and you show me one time how to make something, I can make it. Turned out we were both former restauranteurs. Turned out she was right! Turned out her good memory was one of her work-arounds for not knowing how to read. Turned out we, and the other caregivers, would spend many happy hours in the kitchen. I learned a bit of Jamaican cooking and ingredients from Sharon Doulas (who told me once, Crescent! Until I met you I didnt know white women could cook!) and Carlene Gabidon and Corine Wells (who PRETENDED she couldnt cook, but really could!). And of course, her own African-style recipes and ingredients from Hawa. I taught everyone quite a few vegetarian licks, plus put together combinations they had never had (Sharon was surprised by, but fell in love with, a salad that had avocado, fresh apple, and greens, a slightly sweet dijon vinaigrette, scallions). On Charlottes 97th birthday there was a party on her front porch. My Jerk Tofu was the first thing to vanish from the buffet --- ahead of the Jerk Chicken! I was proud... a fusion recipe between my own v stuff and what Id learned from the Jamaican contingent. Pictures below.
