So, my first bacons are done. The came out a bit too salty for me, so they will need to soak in cool water for a couple of hours and then tried again. I had several side request s for preservative/gluten free bacon, so I did one with just salt and sugar, one with salt, sugar, garlic-(dried and powdered myself to keep preservatives/gluten out, and one with all of that plus Molasses. The lack of nitrates called for more salt to be used, thus my problem. A pleasant side effect is that I have a lot of pig skin to make cracklins from...about six pounds of it pre cooked weight. So today is cracklin experiment day. Stay tuned for pictures later!
