So my wife of Portuguese heritage, Lisa got inspired to make some Karjalan Pies (Karjalan Piirakka in Finnish) because she liked them so much in Finland. Not possible to buy in the US. They are essentially rice porridge surrounded by a thin rye flower crust, baked until slightly browned. The crust is said to have to be so thin you can see all 7 local churches through it. We eat them with hard boiled chopped egg in butter that is spread on top. They turned out pretty good for a first attempt. We had them for lunch by the pool with my home cured Norwegian salmon, Gravlax. All under the Cali sun at almost 80 degrees (27 C). No white Christmas here.
