So, part of the reason I started this page was so I could start a forum about something very dear to my heart. Please understand that I have to be oh so careful airing these views on my public wall or on my restaurants wall as it may offend the wrong people. However here, I believe there to be a fair amount of trust and understanding. So the question that is weighing me down is this: why did I believe it was a good idea to open a restaurant in my home town? Point being, empty dining room. I ask this because I was told how the Watertown Market was in desperate need of a Chef like me to be here. After my first week opening I immediately had to down grade my menu and found out fast the the number one most sought after dish in this town is Chicken Parm. Now I find that the very people who highly recommended this venture post weekly about things like girls night out at Applebees or had a great meal Chilis and I am especially found of this one, best wings ever at Buffalo Wild Wings. Well heres the thing. In order to open this restaurant I had to leave an area that shunned chain restaurants. Chefs were sought after and people didnt go to this restaurant or that, they went to so and so is the chef of that restaurant so lets go there. So whats up friends? Im sad and disenfranchised. Im not feeling the love. Not from you but of the multitudes. So tell me then, should I stay or should I go? And please dont patronize, Im not looking for sympathy, just someone else to tell me what I fear may be the truth...or is there an opus here for me?
