So thankful Im feeling better. We had talked to our Amish neighbors on Christmas Eve and had invited them over for dinner tonight. I was afraid we might not be able to make it if I didnt start feeling better, but thank goodness I am feeling better and dinner plans continue on. This is the first time we are having them over to our home for a meal. I always feel bad for not being a better neighbor and not really knowing them like I used to know my neighbors when I was growing up. We just did more with our neighbors back then. In todays world with me holding down a full time job and then coming home to take care of my duties around the house and my writing, I sometimes feel like I am not really able to be a neighbor or friend the way I would like to be. This week Im on vacation and so we will remedy this problem and have them over for a nice meal and conversation. On my menu are smoked pork chops that Mr. Wonderful purchased at our favorite butcher shop, Winesburg Meats. If you are ever in the area you will have to stop by there and take home something smoked. All their meat is delicious though, so you cant go wrong with anything you take home from there. Also on the menu is a dish of macaroni with a 4-5 cheese sauce, depending on my mood when I mix it up. It will have wonderful flavor with some smoky gouda and cheddar and some havarti,,,and I have a couple other kinds I could use if I choose to. I will top the dish with some panko and parmesan crumbs, dollop some butter on top and let it get a golden brown crust in the oven. Creamy in the center, nice crust on top. Then I will also serve green bean almondine, apple sauce and some homemade bread I purchased at The Amish Door Bakery and for dessert, a pecan pie and tiny whoopie pies I also purchased at the bakery. Our neighbors have two little ones and thought they might go for the cookies before the pie. We shall see. I take a lot of pictures of our neighbors horses and so I have picked out my favorite 20 or so pictures and got them printed today and will gift them to our neighbors tonight. I have uploaded some of those pictures here so you can see them. Isnt the little fellow so cute?I never tire of looking at his pictures.
