So today I did a little cooking at Chase on the Lake. Absolutely the most beautiful place I have ever seen. They want to add Sushi to their menu yet not a sole there knew how to make sushi. I had to laugh at that. Anyway I did Mid rare Ahi summer roll. I did a Lobster baked Kale roll. I grabbed some ginger and cut them into litle roses to for a top garnish, I then made a mango,papaya kewii wossabe sauce.. I dont believe in non functional garnishes so my plates were clean with empty space and the sauce spread with a baby spoon I have in my chef kit. After a twenty min interview I was asked to wait in the bar and have a glass of wine. When they returned they had a contract for two years hired in as the new Head Sous Chef. An hour later after negotiations I signed the contract. Whats awesome about Chase is the rent out boats and poontoons I negotiated 2 days for 8 hours and fuel once a month. I also got my Sundays off. During the winter operations instead of the boat I get a 8 sleeper Ice fishing house 2 days a month. In exchange for my salary and these and other benefits I will have to work 16 hour days. But trust me when I tell you I quickly figured out base pay and overtime pay combined them, and then negotiated my salary. I wasnt going to fall for a salary where I lose out. Oh the one bad thing is bonus is comprised of guest feed back and food and labor cost all of witch has fallen into my job description. My executive Chef is a younger girl and seems to be both fun and funny. I do love working with female Chefs because for the most part they clean as they go and have awesome eyes for detail. Well thats the update oh and on my way home I had to pee really bad, so I did what any good ole brown neck would do. I found a patch of pine trees. Well as I was peeing not more than 30 feeet from me was a Black bear that looked about 160lbs. As I backed out slowly and still peeing mainly cuz I was scared this darn bear followed me to the truck . Some how I locked myself out of my car so had to climb on the truck and go through my sun roof. I named the bear Henry cuz he was cute ( or She ) and gave him the rest of my chicken nuggets. I wish I could tell you I wanted to keep him as a pet but the truth is I wanted to shoot him and hang him on my wall lol. Yep that was todays adventure.
