So what I came up with for dinner... I am calling Spaghetti and Green/Red Meat Sauce. I started with chopped onions(eC) , pressed garlic, and julienne sundried tomatoes(eC). I sauteed them in California extra virgin olive oil (eC) until very fragrant (yes a LOT of garlic) . Then I added some chopped angus beef (eC), and sauteed more until meat was browned. Next fresh finely chopped rosemary, basil, thyme, parsley, and a fresh shredded Parmesan cheese. Then some chopped green pepper, chopped fresh tomatoes and chopped fresh mustard greens. Kept sauteing and added a little fresh lemon juice for brightness. Covered and let simmer on low to blend all the flavors. Made some whole wheat spaghetti (eC) to go with it. Also shredded some fresh white cheddar cheese (eC) as a just before serve topping. Used sea salt in the spaghetti water, and since the cheeses will also contribute salty flavor, I did not need to add any extra salt to the green/red sauce! And a good healthy meal was had by all!
