So what is dinner at your house tonight, or what will you have? tonight we are having Grilled Tilapia in an Lemon and Herb Marinade, pasta salad, roasted veggies and regular salad. The marinade for the fish is so simple and delicious. In a large glass bowl or measuring cup, add a nice handful of chopped basil, about a tsp of chopped rosemary, juice of 1 lemon, 1/3 cup extra virgin olive oil, salt and pepper. Whisk together and then marinate for about 30 minutes. Dont leave it much longer because the lemon juice will start to cook the fish because of the acid. You could add about a tablespoon of Dijon mustard if you want, or substitute other herbs. It goes great with chicken as well! Enjoy! :)
