So yesterday I made amazing little low sugar tarts for our 4th celebration......They were loved. So I am putting the recipe up here for my sugar conscious fb friends and family. 1 package of frozen pastry dough 1 or 2 boxes Sugar Free pudding --any flavor (Lemon and Cheesecake were a big hit) 1 Can whipped cream set out frozen dough 1 hour before prep. When dough is thawed and easy to work with pull out sheet and unwrap. Grease muffin tin with what ever you prefer.. I used olive oil on a paper towel because I was making for Weight Watcher conscious. cut dough into 12 equal squares. Gently press them into each tin. in a small bowl beat one egg with a teaspoon of water. dip the back of a spoon in the mixture and drizzle it on the top edges of the dough cup. put in oven @ 400 degrees until lightly brown. following the direction on your box for cooking time.. usually about 12 to 15 minutes while they are baking.. in a medium sized mixing bowl follow the directions on your pudding omitting 1/2 a cup of the milk it calls for. mix for 2 minutes on high speed. add a cup of whipped cream-- I just eyeball a big mound-- mix again on high speed until thick and fluffy. Set in freezer until cups are done. take cups out of oven an let cool.. they will look funny its ok! after they are cool take the end of a wooden spoon or whatever and gently push in the center creating a bowl shape. fill each one generously with pudding mixture and put back in the fridge until ready to serve....you can dress these up or down as you please... Good luck they are about 5 grams of carbs a piece pretty good for a awesome desert!
