Some menu development this afternoon in the Ben E Keith test kitchen. Working on some Valentine dishes for our customers. We shot a couple videos using several products. Our WiNN baseball cut sirloin, I grilled it crusted in McCormick coarse black pepper and kosher salt. Along with it a portabella marinated in balsamic and garlic then used as a bed for the baseball cut. Using the mushroom marinade, I made a reduction to go over the top of the beef. Served it with rosemary roasted red potatoes and steamed broccoli crowns with a parmesan cheese sauce with just a pinch of McCormick nutmeg! So pleased with this dish! An affordable quality sirloin from WiNN meats, using a couple simple ingredients to create a complex flavor! Enjoy!
