Some of you have asked for my lemon curd recipe... 7-8 ripe lemons ( I use more sometimes, just depends how sour I want it), 1 tbl spoon lemon zest, 3 eggs, 1 cup sugar, 1/4 cup butter (I use marg as I dont often have butter). I mix all the ingredients then put in the pot... Continually stir on a low heat with the whisk until it gets thick, then use a wooden spoon, you know its ready when you can draw a line on the wooden spoon and the curd doesnt move :) Takes about 15-20 mins... Just remember never let the mixture boil, it is a slow process but sooo worth it :) When its done, put it in bottles in the fridge and enjoy :D
