Some of you have asked my what Blarney Stone bars are. Well, let me tell you how I make them. You may choose to alter the recipe.... To make them, use the correct proportions of butter, brown sugar, eggs, vanilla, flour, (GF of course), toffee chips, oats, pecans. Cream, mix, and fold the ingredients. Put into greased pan and bake at 350 for 20 minutes. Realize that pan needs at least 5 more minutes, put back in oven. Then visit with family that comes over, talk and enjoy the family time- for several minutes- maybe 40 or so? Then put shepherds pies into the oven. Wonder why the 2nd pie wont fit. Come up the realization that you never reset the timer for the extra 5 minutes the Blarney Stone bars needed... 40+ minutes earlier. Take out the pan or Blarney Stone bars and set on wire rack while you wonder how in the world they didnt burn horribly! Let cool. Run knife carefully around perimeter of pan to loosen the sides and turn onto plate. Realize that much of the center had crumbled into pieces onto the plate. Consider a few tears since this is for a Bon Voyage dinner. Taste it. Hmmm... it still tastes good! No need for tears. After dinner, use a spoon to scoop crumbles into a bowl. Microwave for 30 seconds with toffee, chocolate, and butterscotch chips. Add a little coffee ice cream and a wee but of whipped cream from a nearly empty can you forgot that you had. Voilá! Rename the dessert Irish Crumble. Its a yummy hit!
