Some of you have been planning Diwali party and special dessert to make that day. Here was one of the desserts in my Diwali party two years back. Phirni, it is very easy to make and a sure winner specially when served in traditional clay pots. These are basically simple clay diyas from Indian store and a wooden spoon from Michaels craft store. Clay pot should be soaked in water for few hours before using so that they are clean and clear from dry dirt particles. I had made around 50 phirni pots a day before the party to set and chill in the refrigerator. Here is the method: Soak 2 tbsp rice in water for an hour. Remove water and grind to form a coarse paste Boil 3 cups milk with 5 tbsp. sugar (or to taste). Add ground rice paste. Stir and let the rice cook and milk to thicken. Add saffron and few chopped nuts. Remove from heat, add few drops of rose essence or kewra essence. Mix well and pour into small clay pots or matkis. Garnish with silver foil and nuts. Cool in the refrigerator and serve chilled. Enjoy Phirni!
