Some people have mentioned wanting my recipe for red beans and rice. Heres how I do it, others have their own methods, ingredients, etc, and thats fine. I like hearing how others do it. I got a real good tip on here a few days ago about adding chicken broth instead of plain water. Ill be doing that one for sure. Even though I posted the pic of the beans today, I didnt make them today. I cooked a ham, and will be using the leftovers and hambone for the beans tomorrow. Soak beans in boiling hot water 1 hr. Drain and rinse well. Dice onions, bellpeppers, garlic, and celery and ham. I save the oil and juice in the bottom of the pot from the cooked ham to add to my water initially. I add the hambone and all my veggies to the water first so the beans soak up seasoned water. I put Beazells Cajun Seasoning in at this time. Never makes the beans hard, if you cook them long enough. I cook with the lid off and the water will evaporate out. I have a separate pot of boiling water on the stove to add as needed so the water doesnt cool down the beans. Heres where I will now substitute chicken broth. I cook them down about an hour and then add sausage. When the juice starts to get thick, I lower the temperature so they dont stick. If you continue to cook on low, they get nice and creamy without need for mashing them. I have on occasion used the mixer instead of mashing them with a spoon etc. This way they come out perfect. Just have some rice ready and some cornbread and you have a meal fit for a king! or queen... Lol
