Someone in a different thread wrote in about losing her mind over pastry, so I thought Id address it in a new thread. Pastry is the easiest thing! If you have a food processor, just put the flour, salt and fat (lard or butter) in and a pulse a few seconds to crumbs. Then add the egg or water (either words) and pulse a few sections just until it binds. Pat into a disk, wrap an hour in the fridge, roll it out and go. If you put too much liquid the first time, which it sounds like what the someone in that other post is doing, roll the pastry out on a more floury board and it will take it in. Pastry is much less fussy than most people would have you believe. Dont be intimidated by it. Its simple. Thats in response to a pastry panic attack had by someone called Alexandrea. If anyone has other tips for her, please put them here for her. Thanks!
