Something for Veg lovers coming Royal Indian Brinjal (egg plant) curry.. This is a simpler version of Hyderabadi Bagara baingan.. Slit 1/2 kilo brinjal / egg plant3/4 length and toss fry in 100ml of oil for 5 minutes. after frying remove the brinjal / egg plant and keep aside. To the oil add 1 cinnamon stick, 8 cloves , 5 green chili sliced and 2 sliced onions. fry them for 3-5 minutes till the onions are golden brown. Add 50-75 gms of ginger garlic paste and curry leaves . Add to it 1/2 tea spoon turmeric, 1 tea spoon coriander powder, 1 tea spoon red chilli and fry the whole mix for 5- 6 minutes on simmer till the oil in the mixture is leaving out. Now make a paste of fried kaju/cashew nut 50-75 gms. Add salt to taste. Add the fried brinjal to the cooking dish and let it cook for 5 minutes on low flame . To the brinjal mix and tamarind pulp 200ml. Let it cook for 5 minutes till done and CREAMY. Garnish with coriander leaves.. Enjoy the Sunday tip: small brinjals are good , donot over fry the Brinjal in the first step. Add a pinch of turmeric to the brinjal when frying so that the brinjal doesnt turn black. Variation: In the traditional dish kus-kus / poppy seeds and till sesame seeds , groundnuts, grated coconut paste is used and these ingredients are added to the masala one after other .
