Something to tempt the plate: Heres a recipe that will help in keeping you on track to healthy eating. Quinoa Salad, Prepare Quinoa as pre package instructions, I like to use vegetable stock instead of water, more flavor. Prepare and set off to the side. 1 sm. Onion finely dice, 2 Garlic cloves minced, 1 Red bell pepper diced, 1 Can of black beans rinsed, 1/2 Cup roasted & slivered almonds, 1/2 TBL spoon lemon juice, 1/4 Cup chopped parsley. Sauté peppers, onion, and garlic for two minutes salt & pepper to taste. Now combine black beans and almonds to pan, pull off the heat. Now we combine Quinoa with the veggie sauté, fluff quinoa, and stir in ingredients, add lemon juice & parsley at the end. Fluff well and serve and enjoy. You can substitute Cannellini beans, or Garbanzo beans, spice it up the way you like it. Can be served hot or cold, just a recipe to get started with.
