Sometimes accidents pay off and experiments work. Only leftover Chicken from the chicken salad, no fresh veggies, cook and driver calls in sick and kids progressive test !! Life couldnt have given me more lemons!! So hussled up a dish in 20 minutes flat, gave it a name Shahjahani Murg and waited in trepidation for my two critics to find out my cheating!! Lol!! But either the name or the taste .. Whatever ...they were leaking it off the plate .. Lol!! Match point to Mom!! So here it it ... MR. NATVARLAL SHAHJAHANI MURG (Please note it is not the original so please do not point it out to me again..hence the conman 😃😃) Preparation: 2 onions ground to a paste 3-4 green chillies 5-6 cloves of garlic finely cut 10-12 cashew nuts ground to a powder 3/4 tsp ginger paste 1 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp black pepper powder 4 peppercorns whole 1/2 tsp of kasoori methi 2 tsp yogurt mixed with a pinch of saffron Fresh coriander For the chicken ---Marinate 200 g chicken in ginger-garlic, paprika and salt Cooking : Lightly fry the chicken in butter till it is cooked. Shred the chicken and keep aside. (Remember I had this done for my salad) Fry the onion paste until it changes colour to a light yellow. Do not overcook. Add garlic, chillies, peppercorns and methi. Cook till garlic softens. Add ginger paste and spices. Add a tsp of water if it is sticking. Once the rawness of the spices is gone, add the cashew powder. Sauté for a minute and add 1/2-1 cup water. Let it simmer for 5-7 minutes until all is mixed. Take it off the fire and mix the saffron yogurt and fresh coriander. Add the chicken. Simmer for a minute and serve with fulkas. 😊😊
