Sometimes time is short and we need to have meals that can be cooked in super quick time. Now the weather has turned colder why not make a really super quick tomato soup? Cook some onions and garlic initially, add a few tins of chopped tomatoes and then a little stock, seasoning and herbs as required. I also added a tablespoon of chia seeds before eating for some added omega 3 fats, fibre and protein! It took hardly any time to prepare (with very little washing up too) and we all loved it! Tomatoes, when cooked, release more of their cancer flighting lycopene!
