Sometimes you are worried you might not have enough on the table for guests and family. Here is a good Foochow tip : Buy three plates of Kampua from your favourite noodle man. Just before the meal, get together vegetables like yew chai or curly greens, garlic, and simply make an adequate soup, (2 cups or less of water)without much oil. Use fish sauce too . Make an omelette and slice finely for garnishing. Or just do scrambled eggs....the more veg you have the better it will be for everyone. Mix together ...I have often found this dish very useful...
