Sorry for the late post, crazy week! Salicylate Free Pizza Ingredients BASE: 4 Cups Plain Flour 1 & 1/2 Cups Warm Water 1/4 Cup of Sunflower or Canola Oil 2 Teaspoons Dried Yeast 1 Teaspoon of Salt A Pinch of White Sugar TOPPINGS: 4-8 Big Onions Chopped 4-5 Cloves of Garlic Chopped 1/2 Cup Organic Maple Syrup (organic doesnt have additives or preservative) 500 grams Marinated chicken breast (or plain) -I tried a lemongrass marinade but it didnt work, no idea how to cook with Lemongrass, but I dont get a reaction from it and love the taste. Mozerella Cheese (be careful to read to packet I found Woolworths Homebrand was safe, but most of the others had preservative) Parmesan Cheese if you want to add some extra bite/flavor to your cheese topping. EQUIPMENT: Hand Held Blender Rolling Pin Wooden Spoon Measuring Cups/Spoons Pizza Stone Frying Pan Pizza Cutter or a very sharp knife Method Preheat oven at a medium heat to pre-cook your pizza bases. (Make sure your pizza stone is in the oven as you turn it on, so that it can heat up slowly and will not crack). Chop the onion and garlic, fry in a pan at a low/medium heat with some Canola or Sunflower oil stirr regularly (this slow process will make the onions natural sugars come out and caramelize) -add half of the1/4 of the Maple Syrup to the pan and stirr in, let the flavors infuse (some will evaporate so the other 1/4 Cup can be added later). Once your Onion is nicely browned tip into a bowl, add the rest of the Maple Syrup in stages, if needed, and vitamize down to a thick paste with your Hand Held Blender (this is your Pizza Base Sauce). Add some more Oil to the pan if needed and cook the chicken on a med/high heat until cooked through. Chop the chicken. (If you want a shortcut/added flavor you could buy a rotisserie chicken and use that instead ;)) Base: Put wet ingredients in your bowl first, then dry on top, it makes them combine easier. Warm water and Canola or Sunflower Oil, then Flour, Dried Yeast, Salt and Sugar on top. Combine with a wooden spoon, then turb out onto a dusted surface to knead and roll out. Tip. When your rolling your pizza base, dont worry too much about the shape and dont press too hard just roll it out in all different directions gently so it doesnt stick to your surface or rolking pin. I halved the amount and made 2 thin pizza bases, you may like to double the mixture or make it twice if you like your pizza bases thick. (I only used 1 Teaspoon of yeast, but if you use the reccomended 2 it will rise more). Once your dough is rolled out to your desired size, put on your pizza stone for 5-8min, til the base is cooked enough to remove and place toppings on without falling all over the place!! Ha ha Remove from oven after being lightly baked, put your Onion/Garlic/Maple Paste on your pizza base, followed by cheese and chicken (get creative, no reason you cant have carrott, cabbage or green beans or Butternut Pumpkin on pizza!), I like to keep to the KISS Principle... Keep It Simple Stupid! Ha ha Place pizza back on the pizza stone with all your toppings in place and cook until the cheese is melted (be sure to check the base, just in case it gets over cooked). Enjoy your Salicylate Free Pizza! Its certainly not the same, but if you need a pizza fix it certainly does the trick!
