Soup feels kind. Maybe thats why we want it when we are ill, why we serve it to our children or why, when its cold and wet, we treat it as if it is an internal barrier from the elements. Like filling our bellies with fresh blown insulation. It doesnt always ask much from us either--not even chewing sometimes. It doesnt illicit guilt bc, well...its soup for Gods sake! But when its creamy like this, it does feel a bit decadent. I love that part. That you can have all that comfort for a 1/2 bag of cheap potatoes? Well, that sticks this simple soup on the must-do list for me more than a few times each winter. Plus, who doesnt like potato soup? Nobody Ive met. So, all you really need is butter and sweet onions sautéed, then simple cut up potatoes, rich chicken stock and half-n-half cream cooked. Add crisp bacon and shredded cheese to the pot. Purée it all to creamy smooth and then, just serve it up bowl-by-bowl with more crisp bacon, sharp cheddar, and green onions. Sigh. This stuff is beyond a comfort food. Potato Soup is more like cheap love in a bowl...and, really, who can pass that up from time to time? Not me. 😘
