Speaking of Chicken fried Steak... THE REAL DEAL AUTHENTIC TEXAS CHICKEN FRIED STEAK This dish is a Texas Tradition and is on almost every menu in Texas.The term chicken fried refers to the way it is cooked as it is fried like chicken.Recipes vary and cooking procedures differ but results are always the same one really tasty dish.There is a chicken fried steak cook off every year in Lamesa,Texas that draws up to 12,000 visitors.This recipe comes from Lela Hoffman(my grandmother)who lived on The Little Hoss Ranch outside of Ft. Worth 2-4 cube steaks about 5 ounces each about 4 cups flour salt pepper 2 cups milk 1 egg oil for frying This is a very easy dish and very quick. first thing you want to do is get your oil preheated.Place enough oil in a skillet to come up about a 1/2 inch up the side of the skillet.You want your oil to be about 350 degrees. While your oil is heating place milk in a bowl and add your egg and whisk thoroughly.Next place your flour in a bowl or small pan and season with salt and pepper and mix well.Okay you are ready.When your oil is hot simply dip your cube steak in the flour then the milk then back in the flour and place in skillet.Fry on both sides until golden brown, remove and place on paper towels to drain.The great thing about chicken fried steak is nothing goes to waste.Add what is left of the flour to your hot oil and stir with a fork to form a paste or roux.Add what is left of the milk and stir with fork making sure to incorporate all of the roux.You are making gravy.season with salt and pepper.Add more milk as needed to make creamy gravy.remember to stir constantly.Your done.place a chicken fried steak on a plate and cover with gravy and enjoy...and Welcome to Texas.
